The restaurant is nice. But actually the meal is not very suitable for Chinese Stomach. The service is perfect. They change the main course for me after I saying its salty for me, and the new course is 100% my style! That's a little surprise. Meanwhile, you can enjoy the beautiful night view from the top of the building. Oh, the water menu and wine menu are amazing.Overall, it's a good place for dinner :)

We canceled in advance due to a health problem, and we wanted to postpone it, since they did not return the money. They gave us a year. First 3-Michelin star restaurant I ve been to. Congratulations to Chef Beck and staff. I was thoroughly impressed. Every single member of the staff paid close attention to detail and were incredibly professional. I had the 10 course tasting menu along with a Sicilian wine (recommended by the som). Chef Beck gave me a tour of the kitchen after my dinner. I won t spoil all the secrets, but each course, wine, bread, water was bursting with taste. Well done La Pergola. I ll be back.

With exception of the mushrooms, the main courses ...

With exception of the mushrooms, the main courses were to the point of "how did he make this?" -- especially the rabbit. Some of the flavor blends did not quite work without the wine pairings, so props to the sommelier, but I think the dish should be able stand alone with or without wine. I also doubt the Italian-ness of the food; Beck is German after all. The cuisine is mostly modern French.
Main desserts were nothing too memorable, the sphere thing is a bit of a gimmick to make a standard dessert "special" somehow (raspberry sphere with chocolate and tea? as common as it gets). Meanwhile, smaller desserts were generally great, like the fantastic pistachio macaron
Room could benefit from some AC. Service feels oddly rushed and distant. Overall, the highs are stong and frequent enough to warrant Michelin 3, but the lows are more obvious than they should be.

An experience that enchants the senses and the spirit!
From the moment you enter the hotel where the restaurant is located, you realize that you have been catapulted into a special place, where the atmosphere that surrounds you, full of scents, creates all the necessary conditions for a unique moment.
The welcome that is reserved at the entrance of the restaurant is an excellent business card, which introduces in an excellent way in an elegant and sophisticated environment at the right point, as does the young lady who takes care of it.
And from the moment you are accompanied to the table you immediately understand that the evening has all the conditions to be a special moment.
The tasting menu is really rich and offers, especially for those who try it for the first time, a long list of dishes through which to live a sensory experience of the highest level. Which, I guarantee, you can still try with every dish chosen a la carte.
A triumph of flavors, aromas, combinations and sensations that will surely leave their mark on each of you.
The staff fully reflects the standard demonstrated in every detail: each waiter performs his task perfectly and all the staff, from the room managers to the sommeliers to all the waiters, seem to participate in a precise choreography, which is aimed solely at satisfying customer, be it a passing tourist, a regular customer or a celebrity. Each treated and served as they show they want.
The view is breathtaking and perfectly frames this enchanting place.
The final applause to the chef, Heinz Beck, a person with exceptional skills that are revealed not only in his dishes, but also in the magic he was able to create, giving me personally the opportunity to experience a little holiday of the spirit every time.

My husband and I have been touring Italy and Croat...

My husband and I have been touring Italy and Croatia for the last two weeks, essentially eating our way through both countries. We ve been to some of the best restaurants, and enjoyed getting to know the Michelin scene throughout. We had hopes that La Pergola was going to be the best and last of our trip, and while the food was incredible expected for a 3-star restaurant the service was extremely disappointing, and honestly, a little sexist.

To cut to the chase, at the end of the night, after the last dessert course and before they dropped the check, we were on cloud nine. The 10 courses had been creative and delicious, and we were enjoying the classic Italian ambience and nighttime view. I was getting cold in my evening dress, and my husband, dressed in a jacket and tie, offered me his jacket to tide me over until we paid the check and left before the last of the client s departed.

It wasn t 30 seconds that I had settled into his jacket s warmth before an employee we hadn t encountered yet hustled up to us to remind us that removal of jackets weren t allowed on the dining room floor. I said surely an exception could be made that we were nearly done (after an 850 meal), and that I was cold. He insisted that no, wool shawls (itchy, to my skin) would be provided for women, men must keep their jackets.

We ve dined in fine restaurants across the world, including the best in Italy, and never have we been treated so pejoratively. We communicated our frustration to our waiter, who handled it with aplomb. Yet, after communicating it to our hostess, she said something to the effect of yes jackets on the floor is our policy, and stood by said talking point in a rude posture literally as the elevator doors closed in front of us.

We ve never been treated as if our presence wasn t welcomed in any Michelin-started restaurant, but after a lack-luster service experience here, followed by this extremely disrespectful showing, we left feeling a lot worse than we went in.

The place is fantastic, but having tested other 3 stars in France in particular, I find this one "below", the alliance of flavors in some dishes is not there, some plates are not enough worked (Including lobster and sole). The final score is very salty, at the level of that of a 3-star Parisian.

The search for particular flavors is evident, without losing the taste of Mediterranean cuisine, associated with the use of excellent quality raw materials. The cost is high, but certainly appropriate to the uniqueness of the place and the dishes.

I do not recommend going there if for you it is an economic sacrifice, but if it were not, going there serves to appreciate the cuisine under a completely different concept from the common one .. experience to do but I would not repeat it. Enjoy your meal

I find it disrespectful to throw away food! I'm watching the episode of MasterChef and the chef who owns the restaurant throws the food in the garbage !!! It is shameful! If the pumpkin blooms are too small or have broken slightly in preparation, well you could donate it to the poor! There are so many poor people who cannot eat and they throw away the food ?! It is shameful!
I hope they read my suggestion to donate food to the poor!

I have always dreamed of being able to taste the magnificent creations of Chef Heinz Beck, to see with his own eyes his splendid dishes. And last night the dinner was wonderfully magnificent, superlative, magical. From the moment you walk through the restaurant door to the one where you sit down and start your culinary experience, everything is a wonderful journey. The staff is professional, knowledgeable, attentive, very kind and warm. Every single course, obviously served on special plates, fantastic mise en place, is told. And while you taste the Master's creations the atmosphere of this place envelops you. Thanks to all the people who work at Pergola, thanks Maitre, thanks to the Sommelier who introduced us to a new wine, thanks to the guy who followed us throughout the evening. Especially thank you Chef Heinz Beck, goodbye.

Breathtaking view of the Eternal City is revealed to guests at one of the world s most beautiful restaurants. Under the guidance of Heinz Beck it has become a temple of international gastronomy, historically the first and, still today, the only three-star Michelin in Rome.

Heinz Beck now has a mini-empire of restaurants, stretching from Italy (Rome and Tuscany) to Portugal, Dubai (which just opened), London (Apsleys) and (from late 2014) Tokyo. The flagship, Pergola, opened in 1994 and is situated on the top floor of the Cavalieri hotel, which is perched on one of the hills of Rome and overlooks St Peter's Basilica.

The wine cellar here is vast: an array of rooms containing 65,000 bottles of wine, with 3,500 different labels offered on the list. There was even an extensive mineral water menu. Example wines were Lis Neris Lis Bianco 2008 at 70 for a wine that you can find in the high street for about 37, Jermann Vintage Tunina 2011 at 90 compared to a shop price of 49, and Guigal La Landonne 2000 at 660 for a wine that retails at 333. The nine course tasting menu here was 210, with a full a la carte choice as an alternative.

Booked La Pergola, a Michelin 3 star restaurant, for our last dinner in Rome few months ago. When we arrived at the door, the hostress said to us the restaurant requires men to keep their suit jacket on while dining, and she ensured me the setted temperture of 21 degree is the perfect temperature (perfect temperature for what?, I thought in my mind)! After sitting there for 5 minutes to wait for our table to be ready, I began to sweat and breathing uneasily in the stuffy air. At that moment, I stood up and walked up to the hostress and said to her I want to cancel the reservation. She was surprised and went to consult her supervisor. The supervisor came and looked at me with an inconceivably expression for couple of seconds. Before he spoke, I said, "May I take off my jacket after I sit in the table, becasue it is uncomfortablely hot in here.". He replied with certainty, "the temperature is setted perfectly at 21 degree, and it is the perfect room temperature." and insisted that I must keep wearing a jacket while I am eating. Without second thought, I said to him, "I apologize for the inconvenience that may caused you, but I have to cancel the reservation." Then, we lefted this Michelin 3 stared restaurant that located in a 5 stared grand hotel of Roma without looking back. The uptight formality that disregard the well-being of their customers totally destroyed an enthusiastic eater's appetite for their food... La Pergola is a formal and upscale restaurants that simply failed in providing a comfortable and welcoming atmosphere for their customers. This is what I would considered as "lack of eater's experience."... P.S. Given it 2 stars on the Google review for flawlessly 60's oldschool glisten style grand hotel.

Food and service were excellent and I could never ask for better. Wine menu was never ending, the water menu was extremely interesting, and the breads and different salts were fabulous. Everyone was extremely satisfied with the appetizers, meals and deserts.

Undoubtedly one of the most enchanting places that...

Undoubtedly one of the most enchanting places that Rome can boast from every point of view. A luxurious place to say the least, the atmosphere that has been felt since entering the main entrance is a film. Really exciting. The restaurant is located on the ninth floor and enjoys a spectacular terrace overlooking Rome from above with the dome of San Pietro on the right and the shrine of the unknown soldier right in front of you until you lose sight of the Roman castles. Chef Beck's cuisine has very few rivals and every dish is a pleasure both to the eye and to the palate. Careful, refined and complex preparations such as the frozen sphere that is empty inside ... the dinner we have chosen has seen three tastings of wines of the highest level scented and perfectly matched to the dishes. Particularly the choice of bread or mineral water where you are invited to choose which to prefer for the continuation of the meal. I don't think having dinner with the lights of Rome in the world and if you want to experience a unique emotion I highly recommend a warm summer evening like the one I experienced and I will hardly forget. A heartfelt thanks also to all the friendly, helpful and always with a smile I will never forget the gesture of changing the napkin bringing a new one every time you get up from the table ....
