Amazing place for craft spirits. Huge fan of the entire line of whiskey they produce. Their canned beverages will give most bars a run for their money. Also the bar staff is exceptional, attentive and always produces the right recommendations. Definitely could not recommend this place enough

In town for work, and within walking distance. Food was superb (pear/pomegranate arugula salad, pork sliders, turtle cheesecake). Spirit centered beverages, but had two ipas amongst 8 other beer types . A little more pricey than your average pub n grub, but a great place for a family / friends to have a great meal.

Social Distancing managed with ease. At this time, one does not go to the back bar to order drinks. One orders from the table I a more traditional manner. Wear a mask and answer screening questions ... and a Noon Patrol is not much further along your path. :))

Brand new! Super shiny and new (copper) haha. Complete Cutwater operations rest here. In-depth distillery tour. Friendly staff and tasty craft cocktails. Great gastropub style food selection. Enjoyed the roasted veggies and loaded fries. These guys are about to get big.

Beautiful space with some really creative craft cocktails. Food is a bit spendy and a tiny bit off. Potato bread was super salty with a weird chemical smell. Bacon in the frisee salad was cut into huge chunks - would have preferred smaller pieces. Ranch dressing on the wedge salad was overpowered with dill. Kids chicken tenders were good as was the adobada sandwich, though it was really more of a pork belly sandwich rather than classical adobada. It was all still pretty decent. I'd definitely go back and try the other things on both the cocktail and food menus.

Excellent trivia game mondays at 7. High class food at decent prices, and all the spirits are top top class.
It's a rather fun big open space they got with lots of different areas and a few different fire pits/ fire places. Highly recommend this place. Take the tour of the production side with Emily, very knowledgeable.

I had a margarita and Mai Tai from a bar in Denver. Really good. I d love to spread this around in denver proper. Proper flavor considering the amount of bars that can t make a decent version of either.

Holler and I can spread cutwater love!!

We really enjoyed the mellow atmosphere, good drinks, and amazing food. You seat yourselves and order at the bar or back. Quick service, comfy seating (indoor and outdoor). In an industrial area but very nice.

Right across and owned by ballast point, where ballast point is the beer version and cut water is hard liquor cocktail bar.
Constellation Brands gas acquired Ballast Point Brewing Co. for $1 billion. Constellation Brands, the third-largest beer company in the U.S., with Corona, Modelo and Pacifico in its portfolio, has purchased San Diego's Ballast Point Brewing and Spirits for $1 billion. So they spun of this cock tail bar as cut water.
The interior is very class yet very open. Such a great ambience in the industrial area.

Happy Hour: Parking is tight, and it can fill soon, start looking for the street parking. Happy hour is a good time to visit here and the best deal to buy is Canned Cocktails, $4/Can.. But during the happy hour the food menu is very limited. This happy hour is designed for big groups and corporate. Service was decent too.
Drinks: Canned Cocktails, you can also buy this Cutwater Spirits Can from Bevmo and other liquor shops. Other favorites here are Old Fashioned, perfectly blended drink. Pluto was very fruity and colorful, if you like it. Other favorites are Fugu Habanero, Noon Patrol and Beta Kerosene. But all the drinks are awesome, you cannot go wrong with your order here.
Food: We tried their loaded fries, it was great. Also, Crisp apple bread was good treat. Loved the Cutwater Burger, very flavorful.

Also take the distillery tour, its free.
-Ves, : It can get loud, for a reason. Parking is tight, especially during Happy hour.

I will update more with my frequent visits.

One of the worst customer service experience when I went to buy a couple of bottles of gin and whiskey here. They didn t even have the right boxes for our bottles that were gifts for friends.

It is hard to support a local Buisness if they are going to make customers wait a long time and not even have the basics like a box for the spirits they sell. Never coming back again. Will stick to better whiskeys out there...

PS- also, the guy serving found us wrong boxes for our whiskey and joked how it ll be a surprise for our friends when they find a different bottle than the (more expensive) label on the box. He did make us feel judged for the bottles we were buying....I wonder if this distillery reserves apologies for their inadequacies only for those customers who can afford their most expensive bottles?

This is our favorite place to share with friends and family that come to visit to grab a great drink and enjoy the atmosphere.

Went this past weekend and our server Chase went above and beyond for my wife and me. We always love this place and the drinks/service/atmosphere will keep us coming back.

My wife and I really enjoyed our tour of this Distillery. Steve did a awesome job showing us around and walking us through the different products they offer. No matter what's your beverage of choice they will definitely have something for you.I would suggest doing the tasting its only 10 bucks and you get to choose from a good selection of spirits I enjoy good tequila and it just so happens during my visit they had just gotten in some bottles that were soon to be released. The bourbon was a must try and also there was a coffee fruit pepper drink that was really different in a good way. Unfortunately during my visit they weren't able to sell any bottles but I was able to buy a bottle at a place near by. Next time I'm in San Diego I'll definitely come back to try out the food at the restaurant and also do a tasting of what I didn't get to try my first visit.

New, clean, modern distillery/restaurant. They serve both beer and liquor, much needed uplift and change of pace for the area. Doesn't seem to be too busy, but it will be the next hot spot for your happy hour.

Enjoyed great drinks and a free tour of the Distillery! If you pay $10 the tour comes with some great tasting! Our tour guide was also very passionate about his job which made the experience even better!

Went here trying to enjoy some drinks and our waiteress, KAT, was excessively rude and did forgot our order multiple times. Had to ask multiple times what the status of our food was. Would not recommend this place while this waitress is working here. Aside from that drinks are good which is why I keep it 2 stars .

Pros: Cocktails taste good and have great presentation. Food I tried was delicious. Nice atmosphere.
Cons: Charged full price for food and drinks during happy hour. No waitstaff, so you must go to the bar to order and wait there while your drink is being prepared. Poor customer service. Only a few parking spaces were open in the lot when it wasn't very busy.

Not likely to visit again. I expect more value for my money. Bartender admitted a mistake was made with my bill, but refused to fix it.

Cutwater is super rad. Their menu changes often which is good because it is also small, so even without a lot of choices on the menu there's always something new to try. The drinks are always a treat as well.

The free tour is done on the hour, and highly worth it especially if you pay the extra $10 for 4 tasters at the end. The tasters are done in a private room which is much more quiet and intimate than the rest of the restaurant.

Good atmosphere but that's about it.

Good atmosphere but that's about it.

Salmon was overcooked and tiny portioned. Actually everything besides the burger is tiny portioned and not cheap either. $19 for a 4oz piece of salmon...

Service is also strange for a sit down restaurant with the ordering at the counter.

This is a beautiful bar with a great atmosphere. We came here to celebrate a birthday and everyone enjoyed their drinks and had an amazing time. I tried the broccolini and the fish and both were excellent. The waitstaff was wonderful. Looking forward to coming back.

Cocktails here are AMAZING! very unique and they use their own spirits in the cocktails, so a nice way to try something new without commitment. Wish they had a wider selection for appetizers

AMAZING! the atmosphere, the service, the drinks, the food. Absolutely great! The building itself was so cool to walk into. Then the greeting, the seating (all with their own plastic partitions), and the service. DANG! Then the cocktails and food followed which was perfect. I literally have nothing bad to say at all! I'll be back, so many times. Even with my house 20 minutes away!

Nice place! One thing that might be helpful for the right choice is that the strength of this house is strong spirits. (Gin, rum, vodka, whiskey - yes, but a microbrewery it is not. There are beers from partners, though.)

Great food and cocktails in a beautiful fun atmosphere. Plus a fantastic tour of the distillery! The loaded fries were delicious, and the tastings at the end of the tour were impressively good for such a young company. Keep it up and I will definitely be looking for your products in the stores.

They have no patience for new employees.at least in the kitchen I was misstreated. By Miguel one of the cheefs.it sucks that someone of your own race instead of help you. tries to put you down. I was left to do the job by myself on my first day as dishwasher helperwith out previous experience. When I spoke to the kitchen supervisor. about this. his answer was. I don't know what to say. Like he didn't care. so I resigned. I wanted for me and them to work out. I herd dishwashers keep quiting because there are too much the way they get treated.

WOW, the Lime Margarita cocktail is definitely a GRAND SLAM. Delicious and full of flavor; this libation does not disappoint. The 4-pack of 355 ml cans pack a real punch @ 12.5 ABV, money well spent. Cutwater Spirits, you have us as customers for life!

It's a really beautiful space, and if it wasn't in the middle of an industrial park, I would give it five stars. Although for what it is and where it is it was pretty great. I had this Torrey pine gin drink that was amazing and the peppino fresco was pretty good too! Also if you've ever had their vodka mule in the cans it's pretty yummy!

Great atmosphere with delicious food. My girlfriend and I went on the distillery tour for Cutwater. It was a very good tour. We ordered the buffalo chicken legs and the loaded fries topped with pulled pork. Now onto the bad parts of our visit; first one of drinks was forgotten the Fugu mule. Which is fine as it had just gotten busy, but when we went on the tour our seat had been taken from us. Apparently, our seats are supposed to be reserved when we go on tours but somebody decided to take our spot. That was disappointing but overall Cutwater Spirits is a great place with great potential.

Sorry about the two stars but I have my reasons. My wife made me promise to mention that she was please with her meal which was Salmon. On the other hand I had the halibut and it was awful. My gripe is this was their catch of the day at market price. The fish was overdone and dry as jerky and they over salted it too. So, not only was it dry and difficult to swallow it was like licking a salt lick. This was a very disappointing time for me and I don't believe I'll be dining at Cutwater again.

I'm super impressed with this place! I love that they distill their own vodka, rum, whiskey and have mixers. They used to be a part of Ballast but since Ballast sold out, they became their own brand. Their drinks are amazingly good and strong. They offer free tours of their facility (you have to take the tour to buy their alcohol). The place is a beautiful venue. Super modern and sleek.

The cocktails/spirits, food, and bar service are all on-point. Prices are also very fair, especially during happy hour ($4 canned cocktails, $7 bartender's choice cocktail, and food specials, ending at 5:30pm). Word of caution for those coming to play Sunset Trivia (Mondays at 6:30pm): this location does NOT do the toss-up question for free drinks, and awards swag to the winning teams, rather than gift cards or credit.

I wish we could have spent some more time here! I would have loved to try all of the different canned cocktails and drinks listed on the menu. The chicken legs with buffalo sauce are huge, definitely a must. The concept is so cool and I wish we had something like this in Chicago. The outdoor space is amazing and you are able to reserve tables for larger groups.

There are not enough good things i could say about this distillary. Emily is the best thing about this place!

First of all, I've never been to a place like this. They have LEGIT canned cocktails on happy hour & the banana wontons were delicious.
Secondly, I highly recommend taking the tour with Emily, she knows her information, and we now because of her, fully believe in this company. Emily is hilarious, fun and really made the visit more than worth while!

If you haven't toured this place yet, you need to GO!

Love this place, great staff and good drinks. Morgan is the best bartender here with great personality. We stayed 4 hours and tried almost every cocktail. The only reason for 4 stars was the food wasnt as good.

I watch them working on this place for the better part of a year, so I was curious to see how it finally turned out. I have to say the atmosphere is pretty spectacular. However I would expect no less from the Ballast Point crew. The food offerings are simple but well prepared. We ordered several different sandwiches, all of which were delicious, although a bit skimpy on the meat. Appitizers are also on the small side. Be prepared to spend at least $25 per person for a sandwich plate and a drink. Ample parking and fast and very friendly service. Incredable selection of craft spirits. Four stars for the food, five for everything else.

I think the woman's name who helped us was Stephanie, but everyone was awesome! I came to taste your selection of whiskey with my wife and kid. They made us feel comfortable and were extremely courteous. The whiskey was fantastic. Great place!!
