My opinion is that you have to be as demanding as the Rte itself is situated, as number 1 in the world, with a long wait for a table, with prices that are also super Top and in a place that in general requires great effort to arrive from Spain and others. countries.
My opinion of these restaurants is that they have to be top in the food, in the service and in the location / setting, all wrapped up in a touch of art. And to be the number 1 of the top you have to link all these principles above 8 without excuses. There must be organoleptic creativity in the dishes surprising in flavors, surprise in the combination of the products, there must be choreography in the service that makes you feel inside a theater, and end up accompanying with a first-rate natural environment, or failing that Well designed and decorated artificial environment.

9 dishes, none surprising, perhaps worth noting -without many lights- the beet with caviar sauce and the tartlet of black truffle slices with a base of grana padano and artichoke. Of course, it improves on frozen desserts. In general, they present an excess of elaboration with butters and cheeses that in the end finish the meal with heaviness (even for stomachs like mine with good serving and background travel). I think it is the first time that I end up stuffed in a Michelin without excess in the amount. Nor does it stand out in the combination of flavors, for example a well-cooked pigeon dish but with a soft hollandaise sauce with a hint of liquorice / juanola on the left and the super intense and pungent flavor and aroma of a black garlic sauce on the right: irreconcilable . I also didn't find their oyster star plate with pear anything special.
Of course, the first quality used product cannot be otherwise.
-Service (score 7).
Of course a correct service with young boys who carry the plates, clean the crumbs and serve the wine. But no choreography, no art. A correct service like that of many restaurants without stars.
-Environment (score 7.5).
The natural environment of the restaurant and its views are 9, but I lower the score to 7.5 because the interior decoration is normal, than you can expect in any other quality restaurant, with a room that only stands out for the view to the outside.
In summary, a global final grade between 6 and 7 very low for the Top number 1 in the world, which falls very short in terms of economic effort, logistics and expectations. In my opinion, I think it is a restaurant that is integrated into a very beautiful exterior environment but that is wasted internally, with rather flat dishes that do not bind products and flavors well and that abuse sauces, butters and dairy products in general. In addition, as in almost all these restaurants, the main Chef Mauro was not there to greet the diners nor did anyone ask at the end about the gastronomic experience. Finally, as an experience it is fine, as a pure gastronomy it does not measure up to the result of the dishes.
