I don't often go out to cafes but when I do in the neighborhood, Cobalt is certainly worth going to. Located in a 'double' 17th century warehouse behind a typical Amsterdam canal house facade, the interior is warm, cozy and friendly. It's never too crowded, even in the weekends, and the clientele tends to be more civilized than in many other Amsterdam cafes. It's a place you can go to for a serious talk or a romantic date. And weather permitting, you can sit outside along the picturesque Singel canal. Within 5 minutes of Central Station, if you are early for your train, this is a good place to stop by for drinks and a snack. Highly recommended.
