There is no superlative to qualify this table! Everything is better than impeccable: welcome, service, appetizers, starters, dishes, desserts, wines, presentations, decoration, environment .... in short, an exquisite moment.

Good service, nice setting, I love the terrace with the garden ven vaster.
Mix of traditional food in sweet / salty.
The wine selections are very wise.

This was one of the best Michelin starred restaura...

This was one of the best Michelin starred restaurants that we ve eaten at. The food was fresh and exciting and every course was an explosion of flavour. The highlight of our tasting menu was the Banka trout and oyster, a blend of sweet water (river) and salt water (sea). The first bite brought a tear to my eye and I wanted to lick my plate clean. Not to be outdone, the desserts by brother Patrice made me think of raspberry sherbets and the lightest chocolate mousse one could ever imagine on your tongue. The brothers Xabi and Patrice Ibarboure have brought a great harmony to their cooking. Both complementary, both vying for perfection, coming together in a dinner that I will remember for a long while.

An exemplary welcome from a very smiling, friendly and attentive room staff.
The example given by the boss and his beautiful daughter;
The dishes, the flavors, the dressing of the plates a real pleasure for the senses.
A real good moment of pleasure shared with my wife a single desire to return as soon as possible.

As for the price, I will simply say, does pleasure have a price?
I can only say that having seen the price of certain gastronomic restaurants in the capital, the price is absolutely correct.
So the value for money is well worth the 5 stars I give

Very nice quiet place. Our room (n 11) was very spacious and nice with an open terrace with loungers and direct access to the garden and pool. Staff listening. Not to mention the Michelin-starred restaurant.

One of the most beautiful restaurants in the Basque country. An impeccable service of dishes combining tradition and modernity and the use of many local products, not to mention the restaurant's vegetable garden. Don't forget the desserts which are fabulous.

Extraordinary taste experience. The place is quiet...

Extraordinary taste experience. The place is quiet, pleasant with a spacious garden and beautiful trees. We went there to celebrate our anniversary. We had the appetizer and a few appetizers on the terrace: melt raw bonito, cream of sheep milk with tasty little vegetables, gazpacho in gelee .... Then we settled in a beautiful room, with a high ceiling vault, in fact an old chapel. The, we were able to savor slowly, one after the other, the dishes of the tasting menu. The entry leaves us a strong memory: made up only of a dozen vegetables of the kitchen garden, raw or half-cooked, it was released a powerful flavor with each mouth. We had forgotten that vegetables could have so much taste! A second entree presented the langoustine in two ways: crispy and melting mouth, well highlighted with a vegetable emulsion In main course, the sweetbread with a crispy top of hazelnut chips was a pure delight that we have try to prolong by tasting it by small mouth. The trout of the Adulde Valley was cooked wonderfully, melting, accompanied by a fine and tasty oyster sauce. We declined the cheese but we regret it soon after seeing - and feeling - the beautiful cheese cart stop at the next table. Raspberry fashion Vacherin revealed the flavor of the fruit. The small madeleines with honey of chestnut, all hot, melted in the mouth. We finally had an infusion, accompanied by sweets: all excellent, with special mission for the macaroon with basil, original and delicious. During the whole evening, the staff was very attentive, informing us about the dishes, the history of the places and the culinary approach of the brothers Ibarboure. We left after a tour in the garden, happy.

In addition one feels at ease there because it is not stuffy. It's the best gourmet restaurant in the area for me, far from the frills of some other places.

My wife and I ended our Basque country trip here and we were not disappointed. The Freres hotel is nice and clean and the restaurant lived up to its Michelin star. We had a wonderful dinner. Artistic and delicious at the same time. Holds its own to Arzak and Akelare.

Veal and Blackberry currant dessert were highlights for us.

The meal was excellent, but I insisted on having a private room (condition for celebrating this anniversary in this restaurant), but despite the promise of satisfaction, we found ourselves in a large room, with other tables.
When I made the remark, specifying that I would have liked to have at least been warned, I was told that other customers had booked after me, and that we were much better in the great room!
Funny way to deal with my request!
Maybe I needed to justify my request?
Next time I will go elsewhere!

We have been with the family for more than 3 years...

We have been with the family for more than 3 years at the brothers Ibarboure and it is always a very pleasant time. The reception is fantastic (despite the 6 children with us!), The place is beautiful and everything is made to feel at home. Meals (we only go to the restaurant) it's always great discoveries, the quality is always excellent, and the quantity is not left for a gourmet restaurant of this level. Thank you !
