Successful meal: original flavors and very well balanced mixes.
Reception and service a little "floating" at times but friendly.
The site is rather beautiful, the decor of the hotel part and the bedroom are on the other hand a little dated and the hotel dining room is austere.

2 * only because, unfortunately, the hotel service is spoiled by a welcome that is not up to the expected (or hoped for) in an establishment of this type.

In French restaurants I generally no longer have high expectations. But the Ibarboure brothers have completely surpassed that! Immediately at the reception I had a warm feeling. Top service with a looser atmosphere. Very friendly service! From the first appetizer we were already sure that the menu was going to be top notch. Tastes were good and each compartment, each part gave its added value. The choice of wines along with the menu was also nicely put together. We have tasted surprisingly beautiful wines! It is always nice that when a question is asked about a product that we receive an answer immediately.
I'll definitely return.

Good but partly inexperienced staff. The heads of row are also top. The staff seem to "flutter" and be a little lost: suddenly a big lack of efficiency. The dishes are original and full of flavor. Finally, I regret that the sommelier had little knowledge of his stocks: we chose a wine, telling him that we would certainly take another bottle, when the time came there was no more ...

4th visit to this great restaurant whose reputation goes beyond the borders of the Basque Country. The food is always delicious, the precise, fine cuisine is in total control from start to finish.
Unfortunately this year, a big black spot concerning the service.

The latter was too familiar and imprecise. Wait an hour between the main course and the dessert.
And the bill that comes before the end of the meal, ouch ouch ouch
Too bad the servers change every year, on our previous visits everything was perfect.

Dishes living up to its reputation. Ends and good presentation. Very good value for money.
On the other hand, I am quite surprised by the service which does not correspond to a star. Our waitress was sulking all evening, my sister had even heard her say to speak less loudly. Mumble instead of speaking in a clear voice when presenting food. No response when asked if cheese and tea were included in our menu, nod from another server and therefore a nasty surprise at that point when adding it.
Little choice this time around the breads.
Considering the quality of the food I leave 4 stars but because of the service I would rather have put 3 .. to re-test to confirm

Following a gift from my children, I spent a weekend at the Ibarboure brothers' hotel restaurant. The hotel is set in the middle of lush greenery. The rooms are large with a balcony overlooking the pool. In the evening we had dinner in the restaurant and everything was good and fine. The tastes were well balanced. The price was not excessive for a star. I will come back and recommend having dinner at this restaurant.

Though this restaurant has one Michelin star (February 2020), it is definitely deserved 3 stars!
The design is fascinating, the service is very professional, yet friendly and the dishes - not kess than amazing. Every single plate (or spoon) was unique, interesting, sometimes surprising and tasty.
This restaurant was one of many we hoped to enjoy in a culinary tour we had in Bordeaux area and by far it was better than the rest, even compared to thosywith two Michelin stars.
