Wow! The brisket is perfect! It has just the right amount of smokiness. It was melt in your mouth tender. Waiting in line is part of the experience. Got to hang out with some really cool people. Enjoyed every aspect of our trip to Franklin s.

The BEST BBQ I have EVER eaten!! Well worth the wait in line!! Don't be discouraged by the wait you won't regret it at all!! Get there before they open. As early as 9am or as late as 10:30am, but definitely not any later!

Everything you've read and heard about this place ...

Everything you've read and heard about this place are all true. Our group arrived at 8 AM and didn't get our food until 1 PM. Luckily, we came prepared with booze and card games. We ordered various meats, but the clear winner was the brisket (followed closely by the pulled pork). You're not an Austinite until you try it!

I went on a Wednesday at 9:45 probably closer to 10am and waited 3.5 hours behind some really hangry people who had no sense of personal space. And then I was tortured with all the smells....

We were projected for a 2:00pm eating time and ended up eating around 1:30.

What I had was the BEST brisket I've ever had in my ENTIRE life. Like holy balls it was AMAZING. Sadly the sausage wasn't so awesome. I've had wayyy better sausage. The ribs were spot on. Melt away good...I just wish they were beef ribs instead of pork. Apparently, the turkey was delicious but I'm not a fan of turkey so I didn't have any.

The sauces were good but nothing phenomenal. I'm still searching for the best BBQ sauce.

Sides? Who has time for sides? BEEF IT UP!

Also everyone cutting the meat and at the counter were super duper nice.

Moment of truth: would I wait again? Nope. I don't like being teased for hours with the smells. I'm just going to order 10 pounds of brisket next time and have a party!

Honestly, it s great barbecue. Yes it s a wait, yes 3 hours in line for food might never be worth it, but this is an experience. Would I do the weekly? Hell no, this is an occasional trip and definitely one worth at least once. The waits in line are interesting with people around the world standing waiting for some amazing brisket.

After being in Austin for 6 years i finally got up...

After being in Austin for 6 years i finally got up early and waited in line. Surprisingly wasnt that bad. Bring a friend, bring chairs, and bring some some beers.

I usually say places dont live up to hype.... the Brisket at Franklins doesn't live up to the hype either... it blows it out of the water. FANTASTIC!!!!

Franklin Barbecue's famous barbecue

The image of a hundred-meter line of people in front of the door is a common sight at Franklin Barbecue in Austin (Texas, USA). Nearby this shop that diners are willing to wait for hours just to enjoy the famous barbecue.

If start queuing from about 8 hours 30 minutes to 13 hours bright, it must, that is almost 6 hours later, the newly dine diners. Therefore, there are people who are willing to line up from ... 5 am to be the earliest diners when the restaurant is open at noon.

Many customers even before the store opening hours, but still have to disorient leave because store employees were informed that they could turn the barbecue has expired.

To serve the customers in the meantime, BBQ grill Franklin offer free seats and sell beverages like beer, coffee ... The diners can just drink while listening to music, playing cards, reading books ... to kill time. Even famous stars like Kanye West have to line up like everyone else. The only character ever agree Franklin Barbecue for free queue is ... Barack Obama.

Rules specify shops: not drinking too much alcohol, respect for other customers, keep their distance from consumer lines when you smoke, do not bring dogs into the restaurant and not a placeholder.

Islamic past February, with an Italian tourist couple even had to get married as soon as I was in line and celebrate the wedding with a barbecue lunch with the famous Franklin Barbecue. Groom Deborah Larsen said: "We had planned to get married in the US before returning to Italy. And the idea to get married while awaiting barbecues have flashed through our heads. We love each other and love Franklin barbecue.

However, not everyone has a long queue to wait for a barbecue. In case of being too busy, customers can hire people to queue for themselves. This rental service is provided by a 13-year-old boy named Desmond. Desmond's father said his son has earned a considerable amount of money, up to tens of thousands of dollars by renting service queue.

So what made Franklin's barbeque so hot?

The Franklin Barbeque was founded in 2009, when it was just a mobile food truck operated by chef Aaron Franklin and his wife Stacy. The food of the restaurant then included smoked beef, pork ribs, turkey ... Two years later, Franklin chefs decided to open a fixed store.

The store started to be popular in 2012 when it was featured by the TV show star about the famous "No Reservations" Anthony Bourdain. Since then, Franklin Barbecue is consistently ranked as one of the most delicious barbecue shop

The meat dish here is described as soft, infused with spices, very crispy and carries the traditional flavor of South American standard.

Barbecue dishes are often served with bread and salads.

Really amazing food and my group fully experienced...

Really amazing food and my group fully experienced "the line". The brisket was sooo good. It melted like butter in your mouth. I also liked that they had some of my favorite local beer. I am glad that we went, but for me it was a one-time experience. If I want great BBQ in the future, I will probably just go to La BBQ. Also amazing and no line ;)

Very good but not the best

I struggled with this rating. It should be a 4.5 star. The brisket is both tender and flavorful as expected. Not the best ever but very good. The sausages were delicious and spicy. However the ribs had too much pepper which just overwhelmed the flavor. Really good but I think I liked Terry Black's a little better. On the plus side, ordering during covid was great - it's ready within a 30 minute window (mine was within 10 minutes). Recommended to try at least once as long as you don't have to wait hours.

I moved here 8 months ago and started to explore he bbq scene quickly. So far I've tried Mickle,labbq,blacks,terryblks, mueller, style switch, salt lick . After finally having the time to wait in line I can honestly tell you that FRANKLIN IS THE BEST!!! The Sliced Brisket perfectly moist and hs just the right consistency. The Chopped Brisket had this wonderful sauce that was sweet and tangy at the same time with a little cofee notes thrown in there to bring out the wonderful smoky flavor. The Sausage....not too dry , not to greasy, just perfect. Even the sides and desserts were on point!! To top it all off, The service was amazing. They all seem super Happy and Love what they do. I got smiles from everyone from the girl outside telling people they were almost out of meat, to the guy slicing my brisket. Smiles and good vibes everywhere. The manager even started handing out free beer to the people who were last in line. Me and my family will go back again and again, when time permits. They won me over!! Thats hard to do when you are the mean judgy brother of a food blogger! YOU ROCK FRANKLIN BBQ!!

I would have given more stars if the staff behind ...

I would have given more stars if the staff behind the counter were not so rude. Came from out of town waited two and half hours without guarentee of food. The staff outside in line were very friendly and made sure we knew the situation. Got to the butcher and ordered a pound of chopped beef and sausage he said, "actually you're going to tell me how many people you are feeding and I will serve you accordingly" this would have been fine if he said this to everyone in front of us. For example a party of two ahead of us got 3 pounds of brisket and he didnt care. he came off as being very rude to only us and asked why we showed up so late when we arrived at 11. Plus the chopped beef was just ok I've had better. Fun experience if you want to feel guilty for showing up when they open.

If you are a barbecue fan, you must go at least on...

If you are a barbecue fan, you must go at least once. Franklin's Brisket, main star of the show, is well seasoned, smokey, and it's tender. If I'm not wrong, they smoke it for 25 hours (the other meats smoke for way less time). I would suggest going on weekdays and arrive before 8am (they open at 11am) or after 12pm. It's good to go with family and/or friends. If you go on a Saturday, I suggest arriving before 5 or 6 am (sometimes they are all "sold out" at 10 am). You get to know people while in line, drink some beers. They close when they are out of meat which is about 2 - 3 PM. Watch out for closed days (Mondays, somedays in August, Thanksgiving Christmas, New Year's). If you want to skip the line and take out, I suggest preordering on their website.

Amazing experience. Totally with the wait. Went on a Thursday and got there at 9:30. Got chairs and a bucket of beer and enjoyed the great conversation with our line neighbors. If you are thinking about taking the trip out to the other place in driftwood, save the travel time and, and just wait in line at Franklin. You won t be disappointed. Best bbq experience in Austin

Verry hard to compare FRANKLIN BBQ to LA BARBECUE I want say top 1 BBQ IN AUSTIN without any doubt. Only 1 problems I m a local and don't like wait. Ok you going to tell me yes you can preorder sure but is month in advance. So if you wan eat spontaneous of one of them. For the food :
- BRISKET both place are just unbelievable is just magic for your mouth . Forget about lean brisket here we are not here for that is moist and that it and you not regret that 1 second!
- SAUSAGE both place have absolutely amazing but a little + for franklin at La Barbecue sometimes there are verry flavorful but little bit dry sometimes.
- PORKS RIBS unbelievable super testy on both place just magic.

Now waiting time ! My + is for LA BARBECUE around 40 to 50 minutes waiting time for them if you go around 11am. FRANKLIN forget about it is 2h30 waiting if you lucky. I know the people like wait for the food in austin sometime is a gage of quality for me is a turn of I live here please hired more people during the week and keep this folklore for the weekend...
I use to live cross the street of FRANKLIN when they have the trailer food so before I was stop only when it was a short waiting time I guess I was so lucky without realizing it.

So 4 because food is super good but no ambiance and bad waiting time.

Just fantastic, if you are thinking about whether you should go or not, just go. Arrive between 6-8am if you want a decent spot in line. Best barbecue I've ever had. They have merchandise available once the place opens up.

Frankly, worth the hype. You do want to make a morning out of waiting in the line, unless you can get a big enough group to take out tons of meat and skip the line. The shining star here is the brisket. You'll want to eat lots to reward yourself for the wait.

When you comes to the pork ribs brisket and turkey I really and truly do not have anything to compare it to. It's literally in a class of its own. I've been eating barbecue all my life and now that I have experienced Franklin's there is no comparison. The sausage is really good having the perfect texture and snap to it. However growing up here in the Lockhart, Texas area, I still prefer Chisholm Trail sausage. The salt and pepper seasoning is nothing extravagant and is very subtle but gets the job done. Not too salty and not Bland. It was worth the 4-Hour line. I highly recommend it having tried a lot of barbecue over the years.

Waited two hours and I would have waited three. I knew the brisket would be good but the ribs were the surprise. Everything was great! Would definately reccomend this to anyone spending time in Austin.

Finally made the pilgrimage over here and all I got to say is WOW! What an experience! I came on a Wednesday morning and got in line at 9 AM. I got my food at 11:30 AM! Not bad at all since usually waits can take up to 4/5 hours. I wanted a little of everything, so I got each of the meats and my two favorites were the brisket and pork rib! These cuts practically melt in your mouth - so full of rich smokey flavor. Their pecan pie is homemade and so good as well! I definitely recommend coming here as it's worth the wait! You'll even meet some cool people in line that you'll become friends with!

We were all unfortunately kinda let down! Too salty/peppery, not enough flavor. But super well cooked for sure. Also, they totes forgot about our order and we had to wait forever while watching everyone get there food. But it happens

I've been hoping to visit Franklin Barbecue for a ...

I've been hoping to visit Franklin Barbecue for a long, long time and I finally had a chance! My bride and I arrived a bit later than we intended, so they were expectedly out of a few items by the time we arrived, but we got to try the sausage, pulled pork, and brisket.

The sausage was great! It has a lot of flavor, a good snap, and the texture is perfect (not that crumbly texture some sausage seems to have.)

The pulled pork was flavorful, but to be honest, wasn't any better than pulled pork I've had elsewhere.

But the brisket? Holy rusted metal, Batman... THE BRISKET!!! The brisket absolutely stole the show. I don't know what kind of BBQ wizardry Aaron Franklin performs to make this brisket, but man, this is by far, THE BEST brisket I've ever had in my life, and the best BBQ *anything* I've ever had in my life. The bark is peppery, and bursting with flavor. Every single bite is heavenly. I don't know how to properly put it into words how good this stuff is. But the next time I'm near Austin, I'm definitely buying an entire brisket to take home.

Thank you, Aaron Franklin, for giving me such an amazing food experience. I'll be back any time I can.

When I tell friends that I went to Franklin's, they all ask if it's worth the wait. The answer is YES.

The brisket is the best I ever had. The turkey and and ribs are no bad either. When I leave there I always have pounds and pounds of meat to bring home and share with family.

I was appalled when I witnessed a long line stationed outside this iconic establishment at the crack of dawn (approximately 8:30a.m.). Nonetheless, the old sayings are true... It is worth the wait! The brisket will convince the highest of skeptics that there is joy in life. However, be wary of the days following your visit. Every other meat you encounter henceforth will be dismal...

We visited In September with another couple. We arrived around 6:40 (yes a.m.!!) and the line had already formed past the covered awning. Thankfully we were still shielded from the blazing hot sun! We finally arrived at the counter at 12:45. The food was absolutely Devine! We ve been to Franklin s twice before and the food was even better this trip! It was worth every minute spent in line and every bead of sweat!! We even got to see Franklin which absolutely. The only thing that would ve made it better is if there hadn t been dozens of people showing up at the final hour...and right at opening to cut in line. I wish people were more respectful of others but I guess that s the world we live in now. I cannot recommend the food enough!!! Amazing!

You've heard all the hype and I'm here to tell you, believe the hype. Hands down the best ribs I've ever had, and maybe the 2nd best brisket. Flavors are just stunning and the moisture and textures are indescribable. Yes, the line is long so skip breakfast, bring a group, a cooler and some games before the best BBQ of your life.

This was for a preorder pickup and take home. The process was really good. A few parking spots in the back assigned for pickup since the is so little parking. Walk up to the trailer with your name and pay. They cut it fresh then. The bbq was awesome. I always wondered if it was worth the wait..... it is. Everything was juicy and flavorful. The ribs fell off the bone, literally. Will return

Totally worth the wait. If you can go during the week. Wait is half the time compared to Sat and Sun. Best brisket and ribs I have ever had. I regret not trying the turkey, everyone says I missed out.
