Why is there no sixth star you can use for special occasions? My friends back in the UK thought I'd lost it when I told them I was queueing for lunch - at 8am! But I wasn't alone - the hardcore were already there, in the best spots in the shade. So I grabbed a chair and joined them - read my book, caught up on my emails, enjoyed the atmosphere. After about 9am, they open the doors so you can grab water (important, if, like me, you're there in the heat of summer) or beer (hey, not often I have a beer at 9am!).
I got in around midday and ordered a half pound of brisket, quarter pound of turkey and a sausage. Turkey and sausage were great, but, wow, oh wow, the brisket. Sublime. It's up there with the very best. Worth a four hour queue? Well, I had nothing better to do that day, and I can now tick Franklin's off my list of 'must eat' restaurants.
Now the high has worn off, I have to ask myself if it was better than Louis Mueller's in Taylor or Blacks in Lockhart? Both places you don't have to queue from 8am. I'm not sure. But if lived in Austin, I'd be there at least once a week!

I've been about half a dozen times, starting when they only had a trailer. Their food is excellent - I don't know that I've had better brisket. The atmosphere is not terrible, but the service is very annoying. The people working there enjoy talking with everyone, but it makes it extremely slow. The line isn t that long, but they take forever to serve each person. It s turned into a place where you have to wait 2 or 3 hours to get food. The food certainly is good, but not worth the wait. I d check it out if you ve never been before, but I wouldn t say that it s worth a second visit unless you can get someone to wait in line for you.

Wake up silly early, get to the queue (which was already ridiculously huge) and wait. Wait four hours and 20 minutes before we sat down to eat.
And boy it was worth it.
Surprisingly fun too.
I was actually most impressed by the ribs, which were by far the best I've ever had. Due to my Brisket obsession, I had had amazing ones before. Here you can try "the standard". Every Brisket should be measured against this. Just perfect.
We took a bunch home (which made for the perfect New Year morning munchies "snack", feeding six of us). However, it really is that much better if you eat it straight away or same day VS the day after, so don't stock up and enjoy the moment!

They are really good at brisket but not at customer satisfaction. I wanted to buy just one package of brisket and ordered it online but because my plans changed I came to Austin 2 days before than I planned and I wanted to pick it up 2 days before the pick up day. I said I was coming from overseas but they told me that they were sold out on the first day. I wanted to pick up my order on the second day but they said it's impossible. I really wonder if it was so difficult to add just one more brisket to the pit for an overseas customer? But hopefully before coming back to my country I could buy 21 pounds of bbq from another bbq restaurant in Houston. By the way although I couldn't pick up my order and I cancelled the order they charged my credit card for 7.5$. I used to be a fan of Franklin BBQ but after this dissatisfaction I changed my mind. One more thing, I think long customer line and "sorry we are sold out" is a kind of marketing strategy. If they wanted they would cook more bbq but they don't.

I have to say that Franklin's BBQ lives up to the hype (mostly). I say mostly because there is NOTHING I would wait in line for 3+ hours. I was fortunate to enjoy Franklin's at a catered dinner and it was fantastic. It took 5+ years for me to get a taste, because I refuse to queue in the tourist line, but if you get a chance to get your hands on some of their BBQ at an event, or have the patience and time to wait in the ridiculous line, you won't be disappointed in the flavor!

That's like the equivalent of the holy grail for chefs, so if you have not checked out Franklin's BBQ, put it on your bucket list. But get there early...typically they sell out by 1pm.

It's likely they will run out of something by then (beans, pulled pork, etc) but should still have their signature brisket. If you want the whole experience, lines start at 7:00!

Not only the high price, when I ordered 4 lb brisket for July 5 they automatically charged me 20 percent gratuity of $30.31 for a curbside pickup. This included gratuity on sales tax as well. When I protested they refunded me half the gratuity saying gratuity from 10 to 20 percent must be paid no matter what. This is not acceptable and unless they reverse this practice, their business will suffer.

I've had BBQ all over the US (NC, Memphis, KC, etc.). This is quite simply the best BBQ I've ever had. The fatty brisket is sublime. If you are in Austin for any reason, do your mouth a favor and make time for Franklin. But definitely go early as they WILL sell out of meat. For reference, the line gets started around 8 am for an 11 am opening (lots of folks take lawn chairs and coolers and sort of camp in the line). And YES Franklin's is definitely worth a 3 hour wait.

Well worth the wait and made new friends while waiting. Able to leave the line to get beverages. Yes, a server handed us a paper wrapped chopped beef on white bread when we arrived to carry us over. AMAZING sliced brisket, best I have ever eaten, and pork ribs were amazing. Tender, moist, flavorful. No sauce needed for either meat. A unique experience. I had a great 1st time experience on a Sunday. I got in line with a couple of friends around 1pm and we were able to get brisket and sausage within an hour! I think the cold front that came in dampened people's enthusiasm for the line, but we gave it a shot when we drove by. Some of the best brisket I've ever had and the sausage was surprisingly really good as well. I also enjoyed the coleslaw, although the other 2 sides were very underwhelming.

We picked it up for the guests we have at our house. We all said bad words in exclamations of joy after our first bites. So the BBQ here at Franklin's is pretty decent. We tried the brisket, turkey, and pork ribs. But, it's not all that much better than what you can get at Black's BBQ, County Line, or a number of other places in and around Austin. The sauces were just average, with a vinegar base. None of them were labeled so we didn't even really know what we were trying. Some of the sauces on the tables had weird colors as if the staff had gotten them mixed up when refilling them, so they ended up being a mix of 2 or even all 3 of their sauces. It was very confusing.
We had to wait in line for nearly 2 hours on a Thursday afternoon. They only had one guy cutting the meats and one guy working the register. We had to stand around with our food for another 10 minutes waiting for a table to open up. What really ticked me off was that they actually had the nerve to ask us for a tip on my credit card receipt and that they had a tip jar out on the counter. We have to stand in line for 2 hours, get our own food, get our own drinks, and then go fight for a table and y'all want a tip? What the hell for?? When did tipping stop being about customer service and instead just a reason for these restaurants to avoid having to pay their employees a decent salary? And it isn't like the food here is cheap. For the two of us it was nearly $70 (and we only had water and shared one dessert).
This whole place is just a one big gimmick. They create an artificial shortage of food and facilities and, for some reason, people just seem to love it. I think one time eating here at Franklin's was enough for us.

I don't use sauce as the BBQ should stand on its own and this does. Austin has numerously highly ranked BBQ restaurants. You should decide if the wait is worth it. We made a pre-order for the food (brisket and sausage) so my review will be mostly based on the food and not entirely on the establishment. Although I do recommend pre-ordering the food to avoid waiting in line for a long time (there is a minimum amount of food required to pre-order) but even then you do have to pre-order way ahead of time.
On the brisket it was some of the best brisket I have had. I have had west and east Texas bbq before, but Franklin's bbq brisket is tops. The brisket was moist and tender and not chewy. A nice smoke ring on every slice and minimal fat.
The sausage was good. It did have a good amount of pepper in it, so a lot of my family did not like it; I like spicy things, and with a kick, so I found it to be good. The sausages come in links and are made with actual casings, the kiddos found it hard to eat through the casings.
Overall I loved the bbq and will definitely be going back for more.

We ordered Franklin BBQ in February for takeout and were super impressed with everything! The process was easy online (though we had to book a few weeks in advance) and the pickup was smooth. Everything we ordered was amazing! Of course, the food is best right there in the restaurant but to avoid lines and crowds during COVID, online ordering is a great alternative when you are hosting a larger group or feeding a family.
