If you like pasta, you **HAVE TO** come to Paulie's. I am currently on a mission to taste out all of their pasta dishes. I have been here three times in the past 2 months. (I have to drive all the way from Sugar Land to here for their pasta. It's a 40-minute drive if you wonder.) I once had great handmade pasta in Boulder, CO, and I thought I would never taste something this authentic again. Paulie's proved otherwise. The texture of their pasta is chewy and tasty. I have tried their Fettuccini Marinara with Grilled Shrimp, Creste di Gallo, and Canestri alla Funghi. They were all cooked to perfection. The flavors were well balanced. The toasts that came with the pasta dishes were truly evil (in a delicious way:)
I tend to come here either earlier (before 6pm) or late (after 8:15pm) so that I can avoid the crowd. It makes sense that people need to wait for delicious food, right?
