Got a slice of Cheese Pizza.

There s something unique about a semi-fresh slice of pizza that just works. It wasn t old, it was still warm and exquisite, but it was at the point where the bubbly moist top of the cheese toughens up just enough to where it doesn t stretch as easily but the sauce is still warm and juicy.

I know what you re thinking, it sounds odd, but the crust of the pizza, unlike many places, finds the sweet spot between chewiness and crispiness that gives a good bite and a great chew. The semi cooled cheese, similar to a rested steak, is now infused with the combined flavors of the Italian seasoning and sauce which increases the flavor profile.

By the time you get to the last bite, you re usually left with bland crust on many pizzas. No so this pizza, it has a perfectly subtle and supportive flavor profile that allows it to taste great by itself, yet not over-compete with the cheese and sauce.
