The new version of Whitegrass is helmed by a young Japanese Chef who does exquisite French cuisine with strong Japanese fundamentals. The focus on the natural taste of good quality ingredients is apparent. Some of the dishes also exhibited culinary creativity, such as the maple duck. A wonderful combination of orange bitters, maple glaze and perfectly done duck, this was an absolute delight and perhaps the best duck dish I ve had so far. The Botan Ebi dish, sesame bread and kinmedai (poisson) were other exceptional highlights. Other dishes exhibited the fun side of the Chef, such as the vegetable terrine which was reminiscent of Megumi s version in Shokugeki No Soma (food wars). Service was excellent though the restaurant seemed short handed at times when we came on a sat night. Still, the new whitegrass still provides a wonderful, exquisite gastronomic experience and is one of the best fine-dining restaurants in Singapore to delight your tastebuds. For reference, we got the gastronomia course for dinner and service took approx 3h. Highly recommended.
