To Morimoto's defense, I will admit that I lived in Japan for many years and am still living in Asia, so Japanese food is a staple for me. Morimoto has very nice sushi and sashimi, but the rest cannot be called good Japanese food. A tempura batter is a very light fluffy batter, made very quickly and with ice cold water to get the way it has to - super light. Morimoto's tempura batter was a bad Schnitzel batter, hard and thick - nothing what a Japanese would appreciate as tempura batter. The dips detto, at best American salad dressings in mini cups. Edamame, a simple dish to get right, but Morimoto's edamame came grey in colour. I guess they were microwaved too long. Edamame get thrown into boiling water just to turn a bright green and they will be perfect. They are super easy to make. How can they get so grey and overcooked?! Miso grilled cod. The miso should be spreatd over the top of the cod, left to marinate and then grilleand. My cod swam in a dollop of miso with black crispy skin on top...... The cod tasted not fresh - but fishy. I wish I were not so negative and had I not read all the top comments on this restaurant, I would not be so disappointed, maybe, but if people think this place is almost too Japanese, I must warn those who know and appreciate Japanese food - this is not the place to find nice Japanese food. It is a very mish mash American version of Japanese food. Having said that, the sushi and sashimis we tried were really nice (not the soy sauce). Finishing off we had the very fine soup 'Dobin Mushi', a double boiled soup which absorbs the goodness and flavours of some pieces of seafood, chicken and mushroom with a Gingko nut thrown in. At Morimoto's, this fine soup was a pungent dashi stock with none of the subtlety which defines this soup in Japan. Why offer it, if you cannot convey the subtlety? Just stay with miso soup. This restaurant is a disappointment...... We really wanted to love it, but wont be back.
