Just speaking from within VO as a chef, this place caters to large business cafeterias in the Austin area, such as the IBM building and AMD Summit Cafe. Chef Matt is allowed to continually practice poor food handling / sanitation. He and his sous chef partially cook chicken breast at the IBM kitchen then transport it on the floor (the vacant dirty floor of a box van -NO SHELVES OR TABLES - during 8 am mopac traffic, and 35 to 45 minutes later, the partially cooked chicken arrives at the AMD Summit cafeteria off Southwest Parkway, to be put in a cooler (partially raw/cooked) and then finished at 11 am in preparation for lunch for the AMD employees. They regularly practice the partial cooking of proteins (meats) as well as vegetables, in order to save time for transporting purposes. They did this exact thing for a high profile / expensive wedding event as well.
Terribly flawed food handling practices, and speaking from an eye witness standpoint - beware and choose another catering option - this place and the owner - Ivan have no standards or respect for what they do, let alone respect for the customer/client.
