First you taste with your eyes! The refined, elegant creations placed before us were among the most beautiful food we've ever been served.
Each course of the tasting menu - 9 of them?? - was served on unique tableware designed precisely for the dish being served. Some served as a canvas for the artfully presented food while others seemed a part of the dish.
The marriage of flavors and textures have been carefully thought out and impeccably executed. Even the garnishes were amazing - a cod dish was rimmed with a salt-looking mound which was actually monk fish that had been frozen with liquid nitrogen into dry "essence of fish"; resembling snow. Incredibly intense flavor.
We had a delicate tarragon scented consomme with gooseneck barnacles (which I actually recognized from a cooking class in Barcelona), venus clams and shrimp. Wonderful.
An almost translucent pasta was filled with the sauce from carbonara (egg yolks, pecorino cheese, cream, salt & pepper), boiled 27 seconds and dressed with a sauce of veal stock, white wine, pecorino, proscuitto, zucchini & ?? The filling literally explodes in your mouth. Absolutely the best!!
Heartier courses in the tasting menu were equally amazing and included a venison dish as well as one of veal cheeks.

Throughout the nearly 4 hour superb dinner the service was excellent; attentive but not intrusive. Love to go back................
