Almost twenty years ago we had tried Antonello Colonna's small restaurant in Labico, near Rome. Very good then. But he has done so much on the road. We have been having dinner with my husband, and the Michelin star is more than deserved for a place that leaves you satisfied for its excellence since you sit down to dinner. Extraordinary modern environment. Well-trained waiters who follow all the rules of elegance in service, availability and courtesy above all. We chose a vegetarian tasting, of simply superb quality. From the initial panzanella, to the cabbage and mushroom pie, then tastings of pasta treated in detail by those who have a clear idea in the kitchen how to achieve mastery. To finish with a fried poached egg to perfection to eat at the spoon. If I had to detect something to improve honestly I wouldn't know what to say. Perhaps the only note concerns not the kitchen and the room, but ... the chef. Antonello Colonna was always present in the room and spent the whole evening with the various tables for comments also on the dishes served. It has been several times near our table (there were only 4 tables in our room) but it never stopped for a quick nod. As it happened to me in many starred restaurants that the chef, if he decides to appear in the dining room, greets everyone without making distinctions. Maybe even just a moment to say "Good evening, I'm Antonello Colonna. Is everything okay? Could be an appreciated courtesy. However, five-star rating more than necessary.
