As I know from my job as sous chef ,DHEC Charleston very strict and professional about food regulation in restaurants but 3 or 4 food stand in king street operate by hazard I see they don t have water or any sanitation sometimes they smok and never wash there hands ,also meat preparations ahead 2 to 3 h and stay exposed to dust and potential air bacteria since no garde sneez, sauces also made home we don t know about sanitation and rotation, I hope DHEC look for this matter to keep residents safe
