I was an intern under Chef Defour for three weeks. He is a fantastic instructor and I learned an incredible amount in a short time. While I was at the school, he instructed a large variety of different classes: a hotel and restaurant cooking course, a gourmet lunch club, a singles dinner course, a class for 41 American vintners preparing 3 different courses, a private eclair lesson for a Chinese student, a birthday party for ten 7 year olds, several teambuilding workshops for work colleagues at corporations....you name it.
This chef is a real pro. Nothing rattles him. All of the students loved him. Even when I made mistakes, he'd take the time to instruct me after the students left so that he made sure that I advanced, too, not just the class.
Highly recommended! I'm going back in 2 weeks!

A great evening spent in the gourmet cooking workshop, learning cooking in a small group and in a good mood under the leadership of chef Renaud DEFOUR. We then tasted our creations around different wines in perfect harmony with the dishes.
We can't wait for a next session! ...........
