The food was great, service was fast, however a couple of the employees were rude to me and a few other people. All I have to say is remember that the attitude you give towards customers can make or break their day sometimes.

When we first walked into this place, I felt like I wasn t supposed to be there or something. That s how weird the employees made me feel. Hardly a glance up, no greeting. They could work on that for sure.
The Baja shrimp anything is amazing. The seafood is cooked to order, and everything tastes incredibly fresh. If you have a craving for some fast, delicious Baja style Mexican, this is where you want to go.
I got the baja fish burrito on a wheat tortilla. It was excellent! The service was quick and the portions were plenty. The lobby was clean and well stocked. They had football playing on the TV and quiet music for a nice atmosphere.
Ate there today around 11:30 am. Drove up from Littleton. It wasn't that busy when we arrived, but it quickly filled up. Food was great, ordered Baja Fish tacos and the fish was fresh and crispy. Fish was prepared/fried. once our order was placed.
Guacamole was a little expensive, however we understand that the mountain towns can be be that way.
Overall, it was a great experience and we would highly recommend you stop by and check them out.

Pretty long line, but that's because the place is always busy! Really great food and I'm not even a burrito fan. I'm definitely going to return and would recommend it to any tourist or someone visiting town. Better than Chipotle without a doubt.
2nd time visit. Signature baha fish tacos are good! But unfortunately rice, beans, and chips were all totally flavorless which was sad. Maybe the cook forgot to season them today. Recommend they copy the recipes of any one of the chains much more tasty sides and then this place would be great.
Just eat there. Everything is super affordable and taste awesome!
Baja fish burrito is my #1 favorite burrito of all time (thus far).

Bomb! Always choose this over Chipotle or Qdoba. Love the chips and guacamole. The chips have some sort of cheese sprinkled on them. Only problem is with everyone wearing a mask it's hard to order, cant blame them for keeping us safe.
Just had breakfast quesadilla. It was super dank. Not every day you can eat breakfast at Chimayo but Friday Saturday AND Sunday you can. But however I like John the most!
Was excited to try the place but the food was okay. Staff was overwhelmed by the dinner rush. The line was pretty long, took a while to finally get our food.
Crunchy corn chips/tortillas were over salted / stale. Steak was kind of dry. Pico de gallo was runny. Flavors were decent but service was slow. Could easily be a 4 star at a different time of day, but this visit was disappointing.
Reasonably priced, in and outdoor seating, and great food! Staff provided generous portions, appeasing my hunger even after hiking a 14er

I have traveled all the seven seas, searched the busiest seafood markets around the world and scavenged international ports for the tastiest fish taco ever created. Little did I know I just had to drive up to Silverthorne to find the highest quality of ingredients and most creative combinations of taste in a fish taco. Five stars.
I ve been going here for a very long time and go every time I m in town. Still dream about their nachos down here in Nola! Try that or their excellent baja tacos. The owners are super friendly and deserve all the success they ve had with their business. Hope to be back soon!

Not good for vegetarians. No protein option other than beans, no brown rice, then the staff was rude to me in front of other customers. Left hungry and upset. I wish I could give it zero stars. I'll keep going go Chipotle for sofritas and the non-GO promise. And brown rice. Get it together, Chimayo.
I am a HUGE Chiptle fan, so I like trying similar restaurants. This does not come close to Chipotle. The only good thing is they have Shrimp and the baja shrimp is amazing. The house sauces are tasty as well. The customer service is horrible with the exception of the older man who works there (I believe he is the owner). The young folks are rude and careless and never get the orders right.
Wow, what a bummer. We were really looking forward to eating here after all the good reviews but we waited in line before even ordering for 35 minutes with maybe 8 orders ahead of us. Once we got up there we figured out why - 2 people running the kitchen and 2 people making orders total for the Friday night dinner rush. This wasn't really the issue - I completely understand when restaurants are short staffed. The problem stemmed from one of the guys preparing the food, who was casually joking with his coworkers while moving PAINFULLY slow while spreading beans, rice and whatever else on the burrito. Dude, you've got 12 people in line now, you may need to move a little faster than usual.
Unfortunately, when we did get our food, it was nothing to write home about. Fish burrito was good, but I'm a vegetarian and the bean burrito was quite literally unseasoned. The beans tasted like they came straight from the can. I could have made a better burrito at home. Churros were decent too. Hoping for a better experience next time.

This place is so good. Fried fish and cabbage in a burrito, how can you go wrong? Whether it's after a big hike or a day at the slopes this is my favorite summit county meal.

We are here for the weekend and stopped in by chance. So glad we did! The food was really good. Everything looked so good. The salsas, the nachos and quesadillas were all delicious! We might have to go bsck again before we leave. Oh, and great service too!

I've been eating here since 2002. The food never disappoints. Try the Chile Relleno burrito or Baja Fish burrito, you'll be glad you did. Good queso and pico de gallo as well.

Skip Chipotle and Qdoba for this local option instead. The food is delicious and the prices are fair. The fish tacos are the best in Summit County.

Chimayo used to be the perfect combination of Chipotle and Smash Burger. I miss being able to get a burger with all of the burrito fixings on top. But this place is still awesome! Great burritos made fresh, including fresh frying of any seafood. Definitely better than the normal Chipotle/Qdoba/Illegal Pete's.
Split a side of fries with your table - they go into the fryer when you order them and are perfect.
The fish burrito is ten bucks but soooo delicious! I'd suggest the grilled shrimp burrito with cabbage, fish sauce, cilantro and a squeeze of lime.
Get a burrito and make it a Chimichanga. You ll thank me later. Great place and friendly workers. I ll be back again!
Think Illegal Pete's or an upgrade to Chipotle. This establishment seems to favor high-top tables and bar stools, but the fish tacos/burritos are well-worth it. Plugged into the middle of retail-hell, this shining light of top notch fast casual will brighten your day and fill your belly.
Tried the steak, chicken, and carnitas tacos and they were all very flavorful and fresh. Wife had the chile rellenos and they were excellent too. After we added the chips/salsa and a couple drinks the price was pretty much like chipotle (which we also like) but with a fresher taste. Next time we'll try the burritos and maybe the fish tacos they are famous for. We'll definitely be back for more local flavor.

Hands down best tacos ever. I prefer 2 shrimp and 1 fish Baja style. I love these tacos so much I was camping in crested butte and woke up hungry knowing I would be passing chimayo on my way home I held out on breakfast just wanting my tacos. Several hours later I arrived hangry as hell and I got my tacos. A customer for 20 years always satisfied.
