I went to CCA on May 7, 2018 to check out the facilities. I was greeted and assisted quite well by Raymart so this prompted me to tell my mom about their Kitchen Discovery Test. Then after a few days my mom called CCA, they told my mom, the Kitchen Discovery Test is a pre-requisite to those considering Culinary Degree because it is actually an evaluation and the participants will be actually cooking three surprise dishes to be announced on the day. The KDT will be on Saturday at 9:30am and the fee was P3800. As I went to CCA on that day, the room had 8-10 students and we were seated on the kitchen theater instead of an actual kitchen. An hour pass by without any activity, we were just sitting and doing nothing. By 10:30am a host by the name of Ms. Joan, showed up to explain what CCA is about. She was explaining their "Marketing Strategy" on explaining how much they re the best and their students so called "Success Stories" in their school. So much looong talk and I really felt this was a waste of our time, C'mon lady I thought we were going to cook ?? I The class also notice how the hostess was chatty and animated with the French chef but not with the rest of us. You could say borderline flirty. Please note that this host, Ms. Joan, was snooty
when asked with questions she does not feel like answering.
By 12noon, Finally ! We were ask to cook and the chef only gave one dish demonstration (Chicken Cordon Bleu). By the way the chef uses cheap ingredients like processed cheese (not sure if Eden brand or Quickmelt cheese) and his cooking style is old-fashioned. It is NOT innovative and NOT interesting to learn. After lunch we were sent to the Grand Kitchen to re-create the dish. I honestly felt very intimidated with the French chef. He seems rude and treated some of us without cooking skills with contempt. He asked a line cook to help me instead. After the dishes were done, he just left without even evaluating our dishes. There was no grading or evaluation on how we did but instead, we were all sent home along with our "creation". Hey what happened to the two other dishes ? They sold my mom on 3 dishes !! After this miserable experience, without a doubt, I would say, CCA is not the Best Culinary School in the Philippines. They will trick you just to get your money. They position and label themselves as the best in the country but the truth is they are mediocre, managed by local staff with and an insolent attitude, a French chef with old fashioned style of cooking and an intimidating vibe.
For those who want the best culinary school in Manila try searching elsewhere because I feel this school ONLY CARES ABOUT YOUR MONEY ! They will deceive you with their marketing skills and glossy brochures. All hype ! To CCA management, if ever you read this, please return our hard earned Php3,800.00
