Too bad that the homemade mayonnaise is the Zaanse mayonnaise from the AH. .... I saw an employee with up to five squeeze bottles enter the side entrance.

Top Restaurant. Only the wines were somewhat disappointing

The food is nice and tasty overall, but I gave 3 star rating because for the main course I got three little bones of five millimeter in my piece of meat, that was very unexpected as the meat was soft. I got scared I could break my tooth. I told the waiter that I got the bones and showed them to him, he said 'that is not how it supposed to be' and quickly left by taking away the plates. That type of service is surprising for such a renowned restaurant.

I am going to Beluga with great pleasure, it is more than worth the drive from Rotterdam. The cocktails beforehand also very good.

was disappointing from two stars more ambience is good, but low chairs and tables was not nice the food (the most important) was refined but not super tasty the bread that is served, was the hard pity

Very nice culinary experience. Not cheap at all but really worth it. Very friendly staff and you feel completely guided through the cylinder adventure. The wines were just a perfect match with the plates.

During our weekend away we collected our dinner here. Was curious whether the star level could be maintained within this takeaway format and must fully acknowledge that this has certainly been achieved. All the dishes were delicious! The only blemish was that we got Tom Ka Kai soup instead of pumpkin soup, but because this was undeniably the tastiest Tom Ka Kai soup I ever had, this is completely forgiven for them Absolutely recommended, even in corona time.

So covid19 has closed most restaurants in Masstricht. Don't worry #belugaservesyou. They will deliver you an awesome meal to your home! It's great, my wife and I could lick our plates clean without any weird looks !;)

The Beluga will close for a new experience by Hans van wolde ... but what a joy ... absolutely legendary entree of eggs and fern. Breed .... fish ... solutions of taste and primitive root. Mediterranean flavors too. Superb 2 stars.michelin without tirarela!

A 4-course dinner delivered to your home with matching white wine. A culinary experience. Sublime quality, highly recommended.

Had made a reservation on March 8 for my wife's birthday. Upon arrival we were informed that the lunche in the lounche bar would be served on low chairs etc. I did not agree with this and left and then we got the message from Hans Vande Wolde that this was probably the last time he had would see us. Well he is right I will never come here again. I think it's a brutal brutality when dealing with customers that way.

To recommend without hesitation

My wife and I visited the "Beluga" (gourmet restaurant, led by H. van Wolde at the time of our visit) on a Friday evening in Oct. 2018, this was our first visit there.

Service:
In our opinion there was a remarkably relaxed atmosphere overall. At and around the table we were taken care of very attentively, professionally and comprehensively.

Food:
The menu was extremely carefully arranged. All dishes and all components were of a very high standard. One focus were dishes that contained fish and in particular seafood - we liked this very much. The range of flavours - the selection, combination and interpretation of the ingredients - convinced us. The overall impression was very coherent; we were simply amazed by the performance.

Wine and cocktails:
The wines tasted very good, we would call them especially elegant. None of the wines were kitschy or overambitious. On several occasions a wine was served with two successive dishes. Nevertheless, the team always managed to combine the flavours to suit the dishes.
My wife had various non-alcoholic cocktails instead of the wine accompaniment. These were extraordinary and very good.

Presentation:
The presentation of the dishes and components was outstanding from our point of view. Apart from "fake effects" and "special effects" as well as a certain restraint in the table procedures, the presentation included an exceptionally deep and broad spectrum of gastronomic forms of expression: Enchanting colour and form arrangements. A playful handling of numerous and quite outstanding textures. Informative introductions and assistance - whenever necessary to understand the aromatic structure. Elaborate and extensive decorations. A variable use of tableware and of positioning. Changing occupations in the service. A very good timing. Portions in the right sizes.
We also liked the presentation of the wines: Knowledgeable, informative and with convincing attunements.

Premises:
We liked the design of the restaurant, we would describe the interior as very modern. The room height is generous, the surface is adequate - the utilisation was high, but the table distance guarantees sufficient intimacy. There was a lot of movement in the room, which was apparently due to the high staffing and service intensity. Depending on the position in the room, a view into the kitchen was also permitted.

Price:
In our opinion, the restaurant offered an outstanding price-performance ratio. We liked this very much.

In summary, we would say that the restaurant even exceeded our very high expectations.

Best Michelin restaurant in Maastricht! We had a wonder evening here!

The extraordinarily friendly staff and the exciting dinner menu created an unforgettable experience for us. We were especially pleased that the restaurant offered some of our group a vegan menu that felt like a true alternative to the regular dishes.

Very interesting food and menu. Expensive... but of quality by all standards. Staff nice and friendly.... once they know you can afford it... tough.. i was told at arrival that the place fully booked and no place for one single walk in... then place in a corner like a bad boy.. bullshit.. screening at the gate... screening for what! Loosing money potentially and creating big bad mouth like mine... anyway... 300 euro experience, 100 euro California bottle that i can buy at home for 40... that is the down side..... Michelin you do more harm than good???

Fantastic experience, wonderfully enjoyed the delicious food and the personal attention and time! Everything just worked!

Beautiful restaurant, with well deserved stars because the food is delicious! Only minus point is the interior design and a kind of small stage where you still feel watched when you sit there. When you are downstairs you feel viewed from above.

In my personal opinion without any doubt this is simply the best place in Maastricht to go for a modern Dutch cuisine. You might want to book it in advance especially for the weekend, but it is completely and totally worth it.

Today Easter Sunday enjoyed an excellent 4-course dinner.
Class! Certainly worth repeating, especially if they are also your neighbors.

Exceptional experience 1 * it's great but a 2 * barely sublime with the flavors of each dish, quality service in a welcoming setting

Truly enjoyable place with nice and friendly staff and quite good cuisine

Been there a couple of times and can't recommend it: my requests to lower music had to be repeated several times (and received an inappropriate answer when I asked the first time, then was just ignored 2-3 times), waiter interrupted our conversations without hesitation time again to introduce wine, and only addressed my husband, when I asked for the invoice the waiter only brought it when my husband was back at the table and gave it to him only. Food deserves strong praise and service needs an urgent make over, including how to treat women in 2016.

The first courses were surprising and very tasty. Main course and dessert were a bit ordinary. They served very original non-alcoholic cocktails. Nicely decorated business, a pity that there is also one TV screen. We came to celebrate our anniversary, I mentioned that when booking, but no attention was paid to it.

Lunch of 4 hours enjoying so many delicious super tastes great dishes. Atmosphere is pleasantly relaxed. Staff with attention to detail and personal contact.

Fantastic service. They take the time for you. There are only 3 or 4 tables available for wheelchair. We were given an explanation per course of what we were going to eat. Unfortunately you soon forget what it was again. Leave the card on the table as a tip. Sometimes nice sometimes not my taste and sometimes surprising. Another nice thing was that we ladies got a stool for the handbag next to us.

Exquisite food, carefully selected wines and nice and well thought through decor. We joined for lunch and went on with 9 courses. One person in our party had very specific dietary preferences and they were able to accommodate all. Great and friendly service, we felt like old friends. All in all great experience

Absolute highlight. Very friendly service, very good cuisine. Eat delightfully without hurry. Lovingly prepared dishes. The operation is very polite but also easy enough not to feel constrained or restricted.
