Every city has a restaurant that defines its category. In Vancouver, the signature seafood restaurant is Blue Water.

We come all the way from Tucson, Arizona, to visit friends every summer, and we always dine at Blue Water. We are always delighted.

Mon Cherie had scallops (6 to a plate), which she pronounced excellent. My friend, who is determined to try every entree on the menu, got sturgeon, which she though was good. I had the cod, which is basically the vehicle for the garnish, which makes the dish. The cod came with chorizo (Mexican sausage) and a wonderful Mediterranean melange of vegetables. It was quite yummy.

The waitress was attentive and cheerful -- every time we asked for something she thanked us! The ambience was superb -- white table clothes and a quiet setting where you could year your conversation without effort.

It was worth the six-hour flight to come here for dinner.
