I have been fortunate to experience Italian and French pancetta on a consistent basis over the past 10+ years, simply amazing alternative to bacon. I ordered a slab of pancetta from La Quercia, Des Moines, IA. Wanted to see if a US company could produce 'pancetta '. I found the pancetta from La Quercia to be extremely fatty, 90%+, really not edible, very disappointing.
Constructively emailed La Quercia, received a standard 'thank you' for your comment. If you want real pancetta, go for the real stuff from Italy, do not buy from La Quercia.
