I've travelled extensively and had high-end sushi in many, many cities in North America and a couple in Japan. This is easily one of the best that I have ever been to when it comes to the quality of the fish. Interestingly, sitting at the sushi bar in front of Shiro is the best way to experience it. I honestly believe that he supplements his mastery with the best and highest quality cuts.
I have literally dreamed of his sushi on nights before trips to Seattle.
