Farm to table is where it's at when you think of Solbar and Calistoga for the most part. Usually packed for dinner during the weekends. A breath-taking patio with small market lights that hang from the trees with view of that world class Soalge Pool is what makes for a perfect summer afternoon/dinner experience. We arrived past the standard dinner time (9 pm is a bit late for us but no complaints by any means) since that's when there was a free reservation time and were seated indoors. Indoors, we were met with a lovely indoor fireplace that made it feel more cozy and relaxing indoors. Their menu changes daily so that adds to the fun of this place as most of their menu revolves around what is in "season." Our dining place took place on a Saturday evening about 2 weeks ago. Their service to us was extraordinary despite feeling that my husband and I felt a bit under dressed dining there. What we raved about after dinner: chilled sweet corn coup and the dollarhide ranch suncrest peaches salad. The corn soup had a good mix of bits of avocado and radish that gave it the punch you'd want in a chilled summer soup. And, the peach salad had a rather small portion of prosciutto to not make it sustainable enough to have just that alone...the lavender-honey vinaigrette and the parmiagano mousse (yes! mousse texture!) in that salad made this salad interesting enough to order again. Our main courses weren't as awesome as our appetizer/first course. I remember taking note that they offered a "poultry" option, a lamb option, a steak option, one vegetarian option (which is what I decided to go with) and a pork roast option. Ambiance: Low lit lighting, each dining table had a cute candle atop it. Wines: very good local Napa & Sonoma wines. Recommendation: Sit outside for their "cocktails" only area and wait to see if you can get a table outside. Best for the wine country+spa dining experience.
