I like knowing if my oysters were bag-grown or line-grown. It gives me an appreciation for how much scuba diving the harvesters had to undergo so that I could shovel down raw bivalves as fast as the man behind the rawbar could carefully pop them open.

That's the sort of place Waterbar is. It's a place to get oysters, and if you're feeling very strange indeed, a place to get a few other things that I've never had. I came for the oyster happy hour, I paid a dollar a pop, and I left. It's possible I had a few cocktails ($5 during HH) between oysters, but they didn't stick in the memory.

The menu is full of interesting and exotic varieties that changes daily like the tides, but if you come for the 1 dollar - 1 oyster happy hour, you don't get a pick. You just eat whatever mystery shellfish you get, and you'll like it.
