I came here after researching prices, and reviews for butchers around Austin. As in Austinite should, I wanted to find a good local place to source my meat wanting to support local business.

I arrived at this location, and liked their setup, and their selection, but was slightly overwhelmed by the process as I had never been to a stand alone butcher shop. I proceeded to order pork belly, from which I planned to make bacon, which I informed the clerk that was helping me. He brought out the requested amount, and showed me it, regrettably I did not isnepct it more, but it looked fine.

Once I got it home however I noticed that about 80% of it was a big block of fat. Not at all I was looking for, lacking the quality striations of fat interlinked with musclear fibers. I took it back the next day, and spoke to who I think was the owner of the location, who was completely unapologetic and just told me "that's how pork bellies are, what do you want me to do about it?". Fact: I can give examples like Centeral Market, and Costco whome have very nice looking pork bellies, without brick sized portions of fat.

I hate that I have to go with larger non local retailers for my products, but the quality of the meat was so poor I had to just throw it away. I wish the owner was willing to exert just a miniscule amount of customer service in order to retain my business, as I would not be here writing this review.
