I'm Japanese (born and raised), so I know Japanese food. It's extremely rare for me to approve of Japanese restaurants in US. The Japan town in SF is one of the few places I've known that make authentic Japanese food. Now, I don't have unrealistic expectations to enjoy authentic Japanese food in Utah. But, many of my friends want to go to a Japanese restaurant once they know I'm from Japan, which is usually a torture for me because I can't enjoy Japanese food around here as they often cannot satisfy my Japanese palate. As such, I had a low expectation when my friend wanted to try this restaurant. To my surprise, they served authentic Japanese food. Food was made right. They cooked rice right. Their menu had a few minor items that you don't see in wannabe Japanese restaurants. I'm actually curious to know how it is that they know how to make true Japanese food. I went to their website, but I couldn't find much info there. I've been to this restaurant a few times, and the only mistake I spotted was that they misspelled one of the ramen noodles. They spelled the pork flavor as "Tonkatsu ramen." The correct name is "Tonkotsu ramen." I let the waitress know about it. Not sure if they've fixed it, but I hope they did. Good job, Hamachi. I approve that you know how to make authentic Japanese food.
