The service was exceptional and much of my meal (the asparagus, caramel bacon, and caesar salad) were great in appearance and taste, but the wagyu steak I ordered was for sure not up to par with what I am used to. I ordered the Snow Beef, and I am almost certain I received the Ohmi steak instead. The taste was far more similar to Ohmi and while tender did not have the utter buttery taste that Snow Beef or other better kuroge steaks than Ohmi usually exhibit. It was very watery tasting in the middle, and while it was medium rare, that shouldn't ever happen with an A5 steak. The taste was actually inferior to any prime i have had at a Ruth Chris or Fleming's, which should be impossible. the marbling, however, just didn't taste like it was there at all. I have only ever experienced this in Wagyu I have eaten outside of Japan. I imagine it is due to an issue with defrosting or the travel but it was very disappointing since the steak simply did not taste like an A5 grade Snow Beef. I do believe any of the other steaks in the restaurant would be a better choice. Even if I just had a bad apple of a steak, paying $130 for chance to have a less than avg wagyu steak isn't worth it. Go for the Snake River or any prime, it would undoubtedly taste better than the steak I had tonight and would cost a lot less.
