A real belter of an experience. Booking essential since new-found fame on TV.
Ambience, staff, decor, experience: flawless. Chatty and friendly staff able to cope with my extremely questionable efforts in Spanish. Full explanation and stories to accompany many of the dishes and the providence of the beef and it's cooking (unaged over an open fire).
Incredible sides and appetizers; the peppers are an absolute delight with an unchanged Basque recipe over 60 years old - mop up the juices with your bread, amazing! The same goes for the simple tomato salad. Ingredient-centric cooking, which delights.
The txuleton was incredible. Slight smokiness from the cooking over a wood fire, fat rendered and in places crispy, the main cuts butter-tender. For me, I've had better steak, not many mind you. The almost black flesh and yellow fat of aged galician beef is impossible to beat (same cow as Casa Julien, but dry-aged).
The boss man was a delight.
The wine choices huge and delicious.
The coffee was superb.
I want to go back again and again.
