Just had a great vegetarian dish for lunch at a Gosford & Erina Business Chamber event catered by the Gema group. To be honest I wasn't expecting much but was pleasantly surprised by the high quality of the dish - Stuffed red capsicum (stuffed with pearl cous cous, roasted pumpkin & roasted spanish onion) topped with pan fried mushrooms (enoki & normal). All served on a delicious mash with lightly steamed broccolini. I wish I'd taken a photo so I could share it here! Great job Guys!
