Estate Vineyards

Wines at Melville are fermented using native yeasts found naturally on grape skins rather than commercial yeasts which can mask terroir-driven flavors.

Wines at Melville are aged primarily in French oak barrels sourced from some of France's top cooperages such as Taransaud and Francois Freres. Oak aging adds complexity while allowing wines to develop tannin structure without overpowering fruit flavors.
