The evening started slowly with a variety of servers coming over to our table as if they were unsure who actually was handling our party. Things picked up nicely and the cocktails and food were fantastic. The only miss was their version of paella which we found to be a bit rich but that is of course just a matter of personal preference.

I was however bothered by the growing trend of surcharges to cover a living wage, kitchen staff or health insurance coverage. Not sure why those items aren t already covered by the owners of the restaurants. Why don t they raise prices as needed, do the right thing for their staff and stop the virtue signaling and guilt tripping? If you are a business owner who is doing the right thing, just increase your prices by the 3% and let your patrons know you are treating your team with respect and providing benefits. (BTW, it has nothing to do with the cost of the surcharge as we left our server a 25%+ tip on the total bill after taxes and the surcharge )
