Anyone who has food allergies/intolerances probably knows the agonies of trying to eat out. The eye rolls, the annoyed tones, the I m sure it s fine when you know they probably didn t even check the ingredients list...it s exhausting. And as someone who wouldn t send food back even if it wasn t what I ordered before I found out about all my allergies, getting over the feelings of guilt that come with being a huge pain in the butt has been rough.

And that s what makes my experience at Centro all the more special. I was there for a huge convention dinner, and not only did the ENTIRE staff know my name and every allergy, they seemed genuinely happy to accommodate my needs. Which is really saying something when you re allergic to CORN and you re eating at a Mexican food restaurant, and they re already preparing a meal for 100 people! They checked in regularly to make sure I was feeling good, gave me high-fives when I d find out there was yet another thing I could eat, and reassured me that they had zero problem working with me every time I apologized for making them have to go check every little thing. And I could tell they sincerely meant it!!

Plus, I m not saying I cried when I found out I could have the churros (for the first time in 10 years!), but I definitely took some in a to-go box and had my picture taken with them because DAMN. They. Were. Amazing.

Jk I totally cried. Churros are life.

So if you are sensitive, have allergies or intolerances, or just want to go have amazing food prepared and served by the best people (seriously can t thank you all enough!!!), go to Centro Mexican Kitchen in Boulder. 100000/10 would recommend.
