Overall good. The lobster ravioli is tender and melting. The langoustines in their crispy brick leaf are remarkably balanced against a refreshing yuzu vegetable cream. The "cube" of cod is cooked to perfection, releasing all the subtleties of its flavor, served more with sweet and melting vegetables which each bite is a treat. The dessert, based on crispy tiles, a mousse with tonka bean and thin walls of dark chocolate, is a blend of textures and tastes perfectly studied. By cons, the almost demanded calf arrives bleeding, and the tea arrives 15 minutes after the sweets. We can also regret the use a little too systematic butter, which is unfortunately an easy way too often used to bring creaminess, and whose lightness is only apparent.
