The first time I went to a cooking school was at the Dirty Apron in Vancouver back in 2009. Dish s format was different but still enjoyable. There is a short introduction and description of the food to be prepared and where everything is. There are no dedicated workstation for each pair, but rather one giant commercial kitchen space with three stoves and plenty of food preparation area (there s also an oven and blast chiller etc.). Instead of watching a demo of each dish being made and then making it on your own from scratch, you choose which components you want to be a part of, with the opportunity to move around to try other things. Everything came together nicely, and it was still fun, but definitely liked the way classes were conducted at the Dirty Apron a lot better. One of the best parts was chatting with the other guests at the dining table at the end.
