A different side of distilling from the legendary Teeling family, this is light-years away from their beginnings in the converted potato alcohol plant in Cooley - the scale for starters is so much smaller, all three stills (named after John's three granddaughters) fitting in one hall, even down to the mash tuns made out of oak staves, a feature you don't see in even some of the most traditional distilleries all combine to make this an unforgettable experience and certainly not the type of distillery you'd expect to find in the Dublin Liberties. Possibly pointing the way toward the future of distilling, there is a bohemian, modern vibe about the place, with more than a nod to the roots of uisce beatha. Friendly and knowledgeable tour guides and staff and a more-than-decent cafe are icing on the cake. Perhaps exactly what could be expected from the producers of the best blend to hit the market in decades.
