This was my first luau and I'm very glad we went to Chief's. We also had a small mishap the night we made the reservation but they let us postpone it and even gave us a better table.
There are many activities you may or may not participate in. They don't force you to do anything. Everyone was very polite, the food was good and it was a fun night. If you're just a couple, try to get through the gate asap so you get the front seats at the table (you'll likely share it with a large group).
