Incredible experience, and a must-have when in Madrid. I went in expecting it to be a typical tourist trap (especially given its status as a Guinness record holder), and while there were many tourists- was surprised and pleased to be proven wrong.

The pricing is higher than the average restaurant in the area, but not so much to be inappropriate or a cause for alarm, and certainly reasonable- my bill was under 50 Euros for an entree, wine, bread, dessert and coffee. Most of the servers I met had excellent English speaking skills, and carried themselves with the professionalism and service you'd see out of establishments more than 4x their price range.

And the food! Remarkable, delicious, a lot of attention paid towards it. While I have a minor comment to make- there was a lot of meat, and very little in the way of potatoes/vegetables, what was put in front of me was very high quality and cooked to perfection.

If i'm ever in Madrid again and have more money, I'm coming back here. Although to anyone reading this post: ignore the more Spanish dishes and go for the house specialities instead. I know, I know, you came to Spain to eat Spanish food. But really, you'll thank me later when you see the amazing food they're known for! :-)
