Beautiful restaurant with high standards of detail...
Beautiful restaurant with high standards of detail and execution by the staff. Three tasting menus available - 3 courses defined at 75, 5 courses defined at 105, and chef's menu at $125 per person. We sat at the chef's table where an open kitchen allowed us insight to the level of care in cooking and plating the dishes. More romantic intimate ambience available at tables around the rest of the restaurant.
The chef's revealed an extensive knowledge of pickling and preserving vegetables, and working in tangy flavors to balance out very minimal but rich meats, foie gras, or cod. We started out with an amuse bouche that was a cod parfait (with the most amazing texture) shaped like a block above a spoonful bed of pickled greens, an oyster with a pear puree, and a house made prosciutto with shaved truffle. The next course was a surprisingly complex celery root bisque (vegan) paired perfectly with nettle pesto and some oil drizzled. We had a seared albacore tuna with a beautiful flavorful rub on a beet miso puree. A foie gras on top of brioche (a little too rich for my taste but enjoyed with assortment of accompaniments including cocoa nib, sunchoke puree, blueberry, blackberry.) Pan-seared cod (crispy skin) in a dashi broth with mushrooms and pickled radishes.
The highlight was honestly the main course that was an 11 day old barbeque brisket minimally dressed but started with 5 days marinating with house made rub, followed by 24 hour smoker, 12 hour braising and more days incubating. The effort here was extensive but not at all ostentatious, paired with such delicate finesse- executed with such grace.
We then ended with 3 sweeter/dessert dishes highlights of which were a pallete cleanser made from Rachel's ginger beer, a bayleaf ice cream, and olive oil cake.
Unfortunately, we did not feel like pairing with alcohol but the beverage director seemed to be doing some sommelier work, we'd be interested in trying next time. Cocktail list had some very unique recipes that looked impressive as well.
Overall there is a level of grace with which Art of Table executes it's menu and dinner experience. We are so happy with our experience we will definitely be back.
