As is always the case with Earls, we are told to wait. We sit and wait. We watch tables leave. We watch hosts stand at the front. We watch the table sit empty. We watch the very slow process of clearing and resetting. We watch the table sit empty a bit more. One of the main tenets of the service industry is getting guests seated. There is no sense of urgency at Earls for getting people into their seats. I find that odd and off putting for such a seemingly organized place.
