Wow! We were referred to The Cheel by the lovely owners of Stagecoach Inn in Cedarburg. What a pleasant surprise in suburban WI. We sat on the patio which had these great shawls with traditional patterns to keep warm for those of us who run cooler. They had fans and a lovely breeze coming in if you lean toward the warm side.

Not sure if it's just because we eat exotic cuisine from around the world on a regular basis or if it's just because we like spicy food, but we found the food to be under seasoned. I was expecting this cuisine to pack a nice punch with new flavors we are not accustomed to. The momos and aachars seemed especially bland to me despite everyone raving about them. I realize Midwesterners tend to like their meat and potatoes with just some salt and pepper, but ethnic cuisine is for the adventurous sort. I ended up ordering the intimidatingly labeled aago ("try it at your own risk"). After mixing that in with our thali, both my husband and I were pleased.

I get it, you cater your restaurant to the local demographic. I would recommend the following solution: You have a staff that is well educated about the cuisine and seems to like to discuss the many options and how they advise enjoying the menu. Since it is clear you have a well trained staff and provide them with the time to discuss the cuisine before ordering, why not also inquire about spiciness and help the table to order the food in a way they will be pleased? Had I known the aago was a common addition to the cuisine for those who like it spicy, I would have used it on the momos as well. Or maybe we could order our food with extra seasoning?

Overall, this is a fantastic place to get a break from the traditional steak, burger and fish fry. I think the fusion of cuisines is well balanced on the menu. I really appreciated the knowledgeable staff. Let's just put that knowledge to more use and get the flavor kick right from the start. I can't wait to come back and try out something new!
