Interior is minimalist. Service is brusque. Food is expensive...and worth every penny. The chefs know what they're doing, from the cut of the fish (thick, and just the right amount of fat) to the seasoning (perfect, and you don't need to add anything to it) to the order they serve it (saving the richest for last). The sushi matsu gives good variety for less steep a price than omakase. The chirashi looks small, but is packed with fish. The uni from California is creamy and delightfully fishy. The sea scallop is firm and shiny and fresh. The eel is plump and tender. The shrimp is sweet and firm, savory but might. The oyster carried the taste of the ocean. Today was my first time eating here, but certainly not the last. And, tip: sit at the bar.
