Huge success for a first-time risotto attempt! I went with acorn squash since it was what I had on hand, and it turned out delicious, even if peeling it was a bit of a hassle. My cooking time ran a little longer than The First Mess’s suggested 25-30 minutes, so I might have needed a bit more heat. I paired it with homemade cashew parmesan and topped it off with crispy sage. Thanks for the great recipe!
