Five stars for this incredible chili jam at Proud Peacock in Mount Waverley! If you are a Lao Gan Ma fan like me, you have to try this. It has a wonderful toasty umami flavor that I find even better than the famous original Sichuan version. Proud Peacock’s take offers a deeper, richer taste that is less salty and not quite as spicy. It’s absolutely delicious, though I would love to see them release a hotter version in the future.
