The best new vegan place in Portland. The food is local. Almost every dish is amazing. The waitstaff are friendly and offer good recommendations. After it first opened I went there several times each week. They've also started serving brunch!

It s been months since I was so impressed with a restaurant and a menu, and those months include planning a trip to NYC. So many upscale places would seem to be inventive and unique, but when you look at the menu enough you start to see the trendiness and realize they aren t really doing anything different. This was not the case at the Bindery. Our dishes all made sense and had roots and soul, but managed to improve upon the many Continental European-Mediterranean classics rather than become just a very tasty imitation. Not only that, but they do it while ignoring many of the trends that have been played out in so many upscale American restaurants. Denver is full of spots that treat cuisine like an amusement park, so it s a breath of fresh air to see the balance of inventiveness and freshness in flavors and concepts that they ve pulled off at the Bindery, while showing depth and respect with regard to the roots and history of their dishes.
