I found an old edition of the book in the house: BASIC DOUGH. I find it very accurate but I have to criticize your "tortellini" harshly. I am from Modena and, absolutely, the pasta has never been cut into "disks". Perhaps you should inquire with the Brotherhood of tortellini.
