Prima Materia will be an urban winery dedicated to unique grapes (half of which they will grow) crafted into wine with an Old-World inflection. Prima Materia will also be a serious dining destination that functions as a permanent pop-up or supper club and and culinary think tank. The food and wine will, on one hand, be preservationist and historical, with some meals and wine styles based on curatorial recreation, such as dinners based on Apicius' culinary writings, or amphora wines and proper Ports. On the other hand they will be extremely progressive, creating on open meeting place for serious food and wine, contemporary cuisine and a spirit of education and modern exploration. This will all take place in an environment of grounded professionalism, transparency and authenticity.
