They are New Yorkers, they were homesick for some of their favourite foods – authentic bagels being one of them (they tried every bagel in London, but UK bagels are very different from NY bagels). So they started to produce these bagels for ourselves and to introduce to their customer base. Immediately people began to understand the differences between a NY bagel and other bagels. Their bagel is uniquely different from all other bagels in Europe because the recipe and process to create it is different from European bagel recipes and processes.
