I love Italian sausage. I find this product has GREAT flavor for the hot and sweet varieties. It cooks up tender not tough like most sausage. I even take the casing off for cooking at times and still it is very easy to break up and stays tender. And - bonus - there's none of those "chunk surprises" you get in most sausage. Took one star off as it does shrink a bit in cooking.
