Over an hour wait on 02/16/2020 from 6:03 to 7:17....

Over an hour wait on 02/16/2020 from 6:03 to 7:17. Normally a long line moves quickly at the Cafe Rio's in Salt Lake. We didn't see that there was only one person working the line until we made our way near the front of the queue. One person working the front is ridiculous on President's Day weekend. Poor staffing.
